Robby Haynes’s Low-Proof Saffron Mule

With only ½-ounce of liqueur, this low-proof highball is “less of a cocktail and more of a flavor experience,” says Apologue Liqueurs co-founder Robby Haynes. If you’re looking to up the alcohol content, Robby recommends the addition of tequila or gin.

Robby Haynes’s Low-Proof Saffron Mule Recipe:

1 lime, cut into 8 chunks

.5 oz Apologue Saffron Liqueur

Top Note Ginger Beer, to top

Garnish: lime wedge, optional

Muddle 3 of the lime chunks in the bottom of a Collins glass. Add Liqueur and fill with ice. Top with Ginger Beer, stir and enjoy.

Jon East's Chai Highball Recipe:

1.75 oz Twisted Path Chai Liqueur

1 dash Bittermens Hopped Grapefruit Bitters

1 dash Bittermens Buckspice Gingersnap Bitters

4 drops Bittermens Xocalatl Mole Bitters

6 oz Top Note Club Soda No. 1

Garnish: citrus peel

Stir all ingredients together in a highball glass filled with ice and garnish.

Have you experimented with shrubs?

Shrubs are made from vinegar, fruits and sugar and can be sipped on their own or used in a variety of recipes. Their bright acidity and complex sweetness are perfect for mixing into unique and exciting zero-proof drinks.

Maple Hibiscus Spritz Recipe:

.75 oz lime juice

.5 oz simple syrup

1 oz Siren Shrub Co. Maple Ginger Shrub

4 oz Top Note Indian Tonic Water

Garnish: fresh or dehydrated citrus

Stir all ingredients together in a glass filled with hibiscus tea ice cubes and garnish.

Hibiscus Tea Ice Cubes: Brew a batch of hibiscus tea and let cool to room temperature. Pour the tea into an ice cube tray and place the tray in the freezer until fully frozen.

Spiced Vodka Tonic

Spiced Vodka Tonic

Infusing spirits is a fun and easy way to elevate your cocktails. This time of year, we gravitate towards warming spices to add a cozy depth to our at-home happy hours. Play around with what you have on hand (cinnamon sticks, whole allspice, juniper berries, etc.) to create your ideal spirit-spicing mix!

Spiced Vodka Tonic Recipe:

2 oz spiced vodka*

4 oz Top Note Classic Tonic

Optional: simple syrup, to taste

Garnish: fresh orange peel

Stir ingredients together in a glass with ice and garnish.

*Spiced Vodka: add 2 crushed cardamom pods and 2 tsp whole cloves to a jar and top with 8 oz vodka. Let steep for 2 days, then strain out the spices and enjoy.

We might be celebrating the holidays a bit differently this year, but one thing we’re grateful for every year is holiday cocktails!

Last year we spotted a cocktail called "Wonderful Times" by Clay Kirkland of Wisecraft Mixology, featuring vodka infused with seasonal spices, tart cranberry juice, and our very own club soda. We've been waiting for the holiday season to come around again so we could make a version for ourselves and we love it so much that we just had to share. Here's to the social media movers, shakers and mixologists making this season a bit brighter!

Wonderful Times Recipe:

2 oz spiced vodka*

.5 oz orange liqueur

1.5 oz unsweetened cranberry juice

.5 oz lime juice

1 oz simple syrup

Top Note Club Soda No. 1, to top

Garnish: cranberries and rosemary

Shake all ingredients except Club Soda with ice, then strain into a glass filled with fresh ice. Top with Club Soda, stir, and garnish.

Here in the Midwest as we round the corner into November and begin to settle into our cold-weather routines, we find ourselves turning to festive flavors like cranberry and ginger to take the chill out of our bones and the edge off of our days.

Harvest Moon Punch Recipe:

2 oz vodka

.5 oz cranberry liqueur

2 oz unsweetened cranberry juice

.5 oz lemon juice

2 oz Top Note Ginger Beer

Garnish: cranberries, fresh or dehydrated citrus (optional)

Stir ingredients together with ice and garnish if desired.

Transfusion

The Transfusion is a golf club staple, but even if you’ve never picked up a golf club, this recipe makes for a uniquely delicious way to transition into cold-weather cocktails. If you don’t happen to have Concord grapes on hand, red or black grapes can be substituted, and Concord grape juice can be found at most major grocers. For a spirit-free version, just leave out the vodka!

Transfusion Recipe:

2 oz vodka

.5 oz Ginger Beer reduction*

.5 oz lime juice

2 oz Top Note Club Soda No. 1

Concord grape juice ice cubes**

Garnish: fresh Concord grapes and crystallized ginger

Combine all ingredients except the Club Soda in a cocktail shaker with ice. Shake and strain into a rocks glass over Concord grape juice ice cubes. Top with club soda, stir, and garnish.

*Ginger Beer Reduction: Pour an 8.5 oz bottle of Top Note Ginger Beer into a small saucepan over medium heat. Bring to a boil, then simmer for 15 minutes or until reduced by half. Remove from heat and let cool. Keep refrigerated.

**Concord Grape Juice Ice Cubes: Pour Concord grape juice into an ice cube tray and freeze for at least 8 hours.

Entertaining guests can be stressful enough without also needing to play bartender. Why not make it easier on yourself with a pitcher cocktail?

Cran-Apple Gin Pitcher Cocktail Recipe:

5 oz barrel-aged gin

4 oz apple cider

2 oz cranberry liqueur

2 oz lemon juice

1 - 8.5 oz bottle Top Note Club Soda No. 1

Garnish: fresh herbs and citrus, optional

Stir all ingredients together in a pitcher. Serve over ice and garnish if desired. Serves 3-4.

This festive low-ABV spritz will carry you through a night of merriment without leaving you with a headache the next day.

Cran-Apple Ginger Spritz Recipe:

4 fresh cranberries

1 slice fresh ginger

1 oz cranberry liqueur

3 oz apple cider

3 oz Top Note Club Soda No. 1

1 oz Top Note Ginger Beer

Garnish: fresh cranberries and orange slices

Muddle the cranberries and ginger in a cocktail shaker, then add the liqueur, cider, and ice. Shake and double strain into a chilled flute or wine glass. Top with Ginger Beer and Club Soda, stir gently, and garnish.

Pear-Infused Vodka & Tonic

Pear-Infused Vodka & Tonic

Try this fall twist on the classic Vodka & Tonic.

Pear-Infused Vodka & Tonic Recipe:

2 oz pear-infused vodka*

4 oz Top Note Classic Tonic Water

Garnish: chopped pears

*Pear-Infused Vodka: Chop 2 pears and place in a clean glass jar. Top with 16oz vodka, place in the refrigerator and let steep for 1 week. Strain well and keep refrigerated to prolong freshness.

This fall-forward recipe is spiced deeply enough for even the most diehard of PSL fans, yet refreshing and bright enough for those who tend to be turned off by all things pumpkin-flavored.

Fallin' For You Recipe:

1.5 oz Great Lakes Distillery Seasonal Pumpkin Spirit

.5 oz allspice dram

3 oz Top Note Bitter Lemon Tonic Water

Garnish: expressed lemon peel

Stir ingredients together in an ice-filled glass and garnish.

Rum & Tonic may not be as well-known as some other classic highballs, but this underdog is surprisingly delicious and can be enjoyed in a multitude of combinations. See below for our suggestions, but you do you!

2 oz rum*

4 oz tonic*

Garnish: fresh citrus

Stir ingredients together in an ice-filled glass and garnish.
